Wines by KT are small, lovingly cared for parcels of fruit that have traditional techniques used in their creation. I’m passionate about the township of Watervale 5452 and am working with dry grown, sustainably farmed vineyards in the area. With gentle care from grapegrower to winemaker, working with sustainable principles, it’s my intention to produce wines with drinkability and personality.
2021 Castine Cabernet Sauvignon
With bright and vibrant berry fruit, the rich concentrated palate has a fine mouth-coating tannin, which will serve this wine well for long term cellaring – if you can be that patient! It’s a classic reflection of the Clare Valley and it’s an exciting first release for all of us involved.
Our small batch parcel is unfined and unfiltered, and with only 100 dozen made, it’s in limited supply. Using traditional techniques in its creation, this wine was open fermented, wild fermented, basket pressed then aged in 100% French oak (40% new French oak puncheons) for a period of 18 months.
Flavour Profile
The Castine Family at Morella Farm – close to the township of Watervale, Clare Valley – is a fourth generation viticulture, pasture and broadacre business, consisting of 37 hectares of vines.
Rose and Kim Castine planted their first grapes in 1997 and have a passion for sustainable agriculture, including viticulture. With the assistance of Dr Mary Retallick they were included in the inaugural Eco Vineyards programme in the Clare Valley, which focuses on enhancing functional biodiversity and in turn assists in improving efficiencies in water usage, undervine weed management and reducing chemical and environmental impacts.
The Castine family are committed to ensuring that their property is viable and sustainable for future generations, and the Wines by KT team are proud to have been wine growing with the Castines since 2020. From this vineyard we make Riesling, Shiraz and Cabernet Sauvignon, and are thrilled to share our new 2021 Castine Cabernet Sauvignon with you.
